| Protein Efficiency Ratio (PER) represents the level of protein that is utilized by the human body. At the time of implementation, egg was known as the highest quality protein and given a PER of 1.0. Whey isolate would later be found to be of higher quality receiving an unofficial PER of 1.14 - unofficial because the USDA only recognizes a maximum value of 1.0. |
